Hello lovely Moms Dish readers! I hope you had an enjoyable weekend. It's Monday yet again, which means it's time for another Meal-Planning segment. Enjoy your week, and eat well with some of these delicious recipes!

MONDAY
Paninis
Potato Salad

Paninis are great for Mondays because they're quick and easy. Plus, you can use whatever sandwich ingredients you already have on hand. Then use a panini press or heat stovetop. Make extra potato salad so you can serve it with lunch the next couple days.

PANINIS
We typically smear the bread with hummus or mayo and combine turkey, cheese, avocado and spinach. Use a crusty bread and whatever ingredients you have on hand. Or try this Cooking Light recipe.

POTATO SALAD
This recipe is courtesy of Animal, Vegetable, Miracle.
4 cups potatoes, coarsely diced and boiled until tender, about 18 minutes.
4 hard-boiled eggs
3/4 cup chopped dill pickles
2 Tbs. dill
Salt to taste
Mayonnaise to taste

Mix all ingredients.

TUESDAY
Corn and Zucchini Tacos

This is a recipe I pulled out of SELF magazine nearly a year ago, and it's since become a favorite. We especially love it in summer when corn is ripe and plentiful. It's filling by itself, so we usually serve it alone. Pair it with a green salad if you're especially hungry.

WEDNESDAY
Grilled Chicken with Roasted Tomato and Oregano Salsa
Corn on the Cob

Another winner from SELF. Pair this with fresh grilled corn on the cob for a hearty, satisfying late-spring meal. Grill two extra chicken breasts for tomorrow's dinner.

GRILLED CHICKEN WITH ROASTED TOMATO AND OREGANO SALSA

GRILLED CORN ON THE COB
Peel husks back, but do not remove. Remove silk from corn, then smear corn with butter and fresh herbs. Reposition husks to protect corn. Grill on medium 25 to 30 minutes, turning occasionally. For a simpler cooking method, remove husks and clean corn. Boil in salted water for 8 - 10 minutes. Smear with butter and serve.

THURSDAY
Chipotle Chicken Taco Salad

Make extra servings of this taco salad so you can enjoy it for lunch on Friday.

FRIDAY
Basil Pesto Pizza

If you've been reading this segment for a few weeks now, you know that Fridays at our home are always pizza night. (It's only on the rare occasion that we have a date night or some other commitment that we don't dine on pizza to start the weekend.) This Friday, we'll be trying a recipe I discovered while browsing the beautiful imagery over at A Country Famhouse. Hop on over there and take a stroll around yourself, and then put this pizza recipe on your weekly menu!

SATURDAY
Baked Mac and Cheese


Sometimes Saturdays just call for a simple down-home dinner that's pleasing to the tummy and the soul. And there's nothing like mac and cheese to please both kids and adults. This recipe from Smitten Kitchen is one I can't wait to dive into on Saturday. Pair it with a green salad. And if you've never browsed around Smitten Kitchen, it's another blog you must check out. Most of her recipes use in-season ingredients, which I especially love.
